The Times They Are A Changing

You may have noticed that I haven’t been posting much this year, let alone this summer. I can’t do anything other than to blame it on myself. There is a lot of change going on personally, professionally, and socially. I graduated, I directed volunteers for a major international conference, I traveled, I got a new job, and over all I continued to plan a wedding. On top of that I’ve take on projects such as helping to edit a book publication of the proceedings of the conference I helped with (yay international publication!) and started to help out with a now booming social work initiative Social Justice Solutions (http://socialjusticesolutions.org/).

Through out this all I’ve missed all of you, and I’ve had so many posts running through my head. Food and Gluten Free Living have never left my mind. I want you in my life, and ensure that I have some great blogs to come, but for now I have no time to write. To make up for that, here is a bit of a run down in photo form of the past few months of my life.
On the weekends, when I have time, I’ve been getting more into farmers markets and local produce.

I started a new job and this was my welcome flowers and sign, note the misspelling. I didn’t notice until it was corrected!

Mike and I visited Colorado at the end of July and we are simply in love. Gluten Free friendly, beautiful, and peaceful, and potentially the location of our future home!

We also visited New Mexico. Food and Flavor was everywhere, I was in awe of the local produce and colors. So beautiful.

Wedding planning has consumed much of my time. Owls is how I made this more entertaining and up lifting. We have just under 5 months left, and so much to do still but it will be well worth it!

Early August we traveled to the Lake George region of NY to say someplace we’ve gone for the past 5 years at a friends family’s summer house. It was simply bliss, but unfortunately Lake George isn’t very gluten free friendly. At least love cooking and accomidating our needs.

This was the view from the shore at the cabin, totally amazing. This has become a motivator for me to lead a life that is close to always this relaxing.

  1. Studies show that babies exposed to gluten early on, before the gut barrier is fully developed, have an increased risk of developing celiac disease later in life. Strict adherence to a gluten-free diet is the only treatment available for celiac disease. Because there is no cure available, the dietary changes must be permanent.
