About a month ago I got creative with some left over shrimp and scallops from a dinner party. I wanted to try my hand at making something with them as I really never cook with seafood. After pondering what I had in the fridge I opted for a Spicy Seafood Stir fry.
This is the recipe I pulled together. Sorry I am not perfect with the measurements. I am trying to get the hang of this and I didn’t measure the sauce out when I first cooked this :
Spicy Cherry Pepper (Pimento) Seafood Stir Fry
8oz shrimp, de-tailed, and scallops
4 cloves garlic
1 to 2 Cherry Peppers
Soy Sauce (for cooking and flavoring
Olive Oil
Sesame Oil
White Rice

Anyway, back to cooking. First I minced and cooked the garlic and the Cherry Peppers in a small bit of olive oil until they were tender and smelled delicious!
Next I added the shrimp and scallops.
I stirred and added in soy sauce and sesame oil until I felt the consistency, color and smell was perfect (I know not so technical a way of measuring what I am doing, sorry!)
I cooked it for several minutes and finally I put some of the finished product on a heaping bowl of white rice. I added more soy sauce and sesame oil to taste and mixed it all together!
It made my night but boy were my finger tips burning for HOURS! My only suggestion is to use a mincer if you are cutting up the peppers!
