A few months back I was sent a package of goodies from Shabati Gourmet, a gluten free bakery who’s Company Profile Clearly states:

My impression was that you obviously could not go wrong with any products by a company with that statement. Boy was I right. I tried and shared many of their products from their product page over the past few months and was not disappointed. However, the product that stood out to me the most was probably one of their most simple products, their Rainbow Cookies:

In all honesty, never in my life have I enjoyed rainbow cookies. I was always thrown off by the various flavors that to me always seemed either too sweet (from the jam in between the layers) like or too bitter and lemony (or a mix of both). In addition, they’ve always seemed too hard for my tastes. That being said I have refused to eat any type of rainbow cookies for several years. I decided though to try these, thinking maybe the flavor would be different in a gluten free product. I was right! Not only was the flavor different but they were great! Obviously better than any other glutenous rainbow cookie and to top it off you would have no idea it was gluten free (trust me, I fed them to my friends without showing them the packaging and they had no idea). The layers were spongy and the flavor of the cookie blended well with the flavor of the raspberry jam, resulting in a great soft cooking surrounded by an equally delicious chocolate coating. The product was moist yet held it’s shape as you munched. In addition, they lasted for quite sometime on the counter and kept their moistness! If you enjoy these types of cookies, try these regardless of if you are gluten free! I have been converted!
