Recently I’ve been trying to rely less on recipes that result in one item meals (I.E.: Soups, chilis, pastas etc.) , and work more on creating well rounded plates from what we have. Part of what has been helping me has been my involvement in a local food share in which we giveaway tons, literally, of produce, grocery items, bread, and pastries away to people in need. Each tuesday we meet and folks line up to walk through and pick up items. At the end of each event there is often a lot left over and the volunteers are able to take home whatever they might want in moderation. It’s a great way to help other in the community, keep food from going to waste, and is also an awesome way to get crafty and think outside the box with cooking.
Last week I took home spinach, lemongrass, and something that was getting thrown out since we aren’t allowed to offer meat or fish: two giant Swordfish steaks that were priced at about 16$ each. Knowing these items would be going bad soon I decided to pair the swordfish with spinach and wild rice that we had to make a meal, but what would I do with the swordfish? I had never cooked with it before and had no clue, so I turned to Pinterest where I found a recipe for Seared Swordfish with Lemon Grass Infused Butter. So I whipped up the sauce and sword fish per the recipe, and paired it with some sauteed spinach with garlic, and Trader Joe’s Basmati Rice Medley. It was delicious, nutritious, and full of some very great flavor! I would recommend trying the sauce out on any fish if you like fish!
