Potluck Dinner Club: Red Foods (bonus Vegan Strawberry Swirl Ice Cream Recipe)

Here’s another potluck for the books. Last month’s theme was red foods, one of the largest spectrum’s of color in the food world (and we included anything on the spectrum). It was partially in celebration of Valentine’s Day. It’s obviously a holiday forever connected to hearts, pinks, and reds which made decorating easy! We pulled out some pink and red stripped straws, red cups, strawberry themed plates, Valentine’s Day food markers of owls and hearts to label things gluten free, and pink and white checkered serving platters.

Food wise the possibilities were endless for this theme, there are just a multitude of delicious red foods! Strawberries, peppers, tomatoes, cherries, jellos, red velvet cakes, salmon; so many options!Β With eating anticipation high, this is what we had:

Sundried tomato hummus with red peppers and pita (non gluten free)
Beet salad (Modified to be vegan with vegan mayo)
Blood orange and fennel salad with olive oil and olives
Pepper salmon in a soy sauce and mayo marinade
Zucchini pizza bites
Buffalo cauliflower bites

Beverages:
Red wine

Acai berry ice tea
Cranraspberry Juice
Berry compote

With the exception of the pita EVERYTHING was gluten free. The hit recipe of the evening was the vegan strawberry swirl ice cream. There wasn’t a person there vegan, gluten free, or otherwise who didn’t think it was fabulous. For a strawberry overload several of us had the ice cream with the the chocolate covered strawberries and berry salad. Amazing! Here’s the recipe.

  1. OK, I am just drooling over here.This looks delicious and I love the fact that is gluten free; I had so many skin issues because of it. I wish I had few spoons of this yummy strawberry swirl ice cream right now πŸ™‚

    1. The hummus was great, my friend used peanut butter with sesame oil because she was out of tahini!

  5. It all looks so delicious , I have never tried making my own ice cream before. I think I might give his ago when the weather warms up a bit!

    1. I was always hesitant of the process but got the ice cream maker as a wedding gift three years ago, it’s so simple!!

    1. It is so delicious, especially using Frank’s Red Hot Buffalo sauce. There are a few recipes out there for it including in Thug Kitchen.
