Potluck Dinner Club: Comfort Food (With Bonus Tuna Casserole recipe)

comfort foodTo me, no other food genre tells such a personal story as the ideas that are conjured up when one thinks of Comfort food. It is a concept so ingrained in cultural, familial, communal, and personal backgrounds, and it is truly remarkable to hear the stories behind each dish. Even climate plays a role. For those in colder climates comfort food might be soups or stews, while for those in warmer climates it might be dishes that help cool you down like ice cream.

After almost 2 and a half years of monthly potlucks I am astonished we haven’t yet done one on comfort foods, which was December’s theme. The dishes spoke on their own of family dinners, child hood memories, sick days made better by a homemade dish, holiday gatherings, an indulgent dessert after a long day, and so much more. We had: Gluten free velveeta Mac and cheese, sweet potatoes topped with marshmallows, pizza money bread (not gluten free), meatloaf, minestrone soup, hard cider, ice cream, pudding, apple cake (not gluten free), cheese cake (not gluten free), and packaged candies.

It was nice at this potluck to also get the opportunity to sit down at one table together, something a lot of our ‘venues’ don’t have space for. We passed around the dishes and chatted as we ate and shared the stories (if any) about why we brought what we did to the potluck. One of the dishes that seemed to speak to everyone was the Tuna Casserole, a modified version of a friend’s family recipe which was made gluten free:

This dish is a gluten free version of a friend's family Tuna Casserole recipe. It is the perfect comfort food dish, and is amazingly reminiscent of childhood.

Ingredients
  • 1 12oz bag gluten free Rotini noodles
  • 118oz can gluten free Progresso creamy mushroom soup
  • 2 5oz cans tuna fish, drained
  • 6-10 slices American cheese (enough to cover the top of your casserole dish)
  • 1 small bag frozen peas (optional)
Instructions
  1. Bring the water for your noodles to a boil.
  2. Next add the noodles and cook until al dente. Drain.
  3. If adding the peas defrost them either in the microwave or heating up in a pan.
  4. Once noddles are done Mix noodles, soup, peas, and tuna fish in a large bowl.
  5. Once combined, put in casserole dish.
  6. Cover with a layer of cheese and broil until cheese is melted.
