The National Foundation for Celiac Awareness just started a new initiative to spread the word about CD and the Gluten Free diet. They offer trainings for restaurants and Health Care Professionals. I am excited about this possibility in spreading knowledge and hope it will be helpful. Having limited time and traveling around between work, home and personal stuff (dr.s etc) I have quite a busy week and resort, unfortunately, to take our and fast food on a too frequent basis. Hopefully this will spread the need for GF food to more businesses and encourage people to have a more positive attitude. Maybe Panera Bread where Mike works, which is a pretty large chain at least in the northeaster USA, will one day cater to gluten free needs! I made him aware of this initiative and we’ll see what happens.

The National Foundation for Celiac Awareness (NFCA) created GREAT to raise awareness about celiac disease and the gluten-free diet. Gluten-free Resource Education and Awareness Training (GREAT) programs provide comprehensive information for food service and healthcare professionals. Each GREAT program is tailored to meet the needs of the respective learner. GREAT Food Service and GREAT Healthcare’s courses provide continuing education (CE) units through professional accrediting organizations. Courses can be delivered in person, on-line, or via webinar.
