This CNN article explains the trials, costs and issues associated with having a gluten free child (mostly on the part of wanting your child to feel included). What is inspirational about this article is the passion and dedication that these two moms have to making a change for not only her child but all children with food allergies etc.

Does Celiac Disease ‘protect’ against aspects of Type 1 Diabetes Mellitus?
Evolutionarily you would assume there is a pro side to celiac disease. This article and research study poses that one positive may be the ‘protection’ of individuals with Diabetes Mellitus 1 from developing particular Diabetes related vascular disease. Although a small study this would be interesting to expand on in the future.

I have been one for recipe books lately and I came across this article thinking it was from Huntington NY but alas it’s Huntington West Virginia. Nonetheless, this book by Carol Fenster looks like it has great recipes and tips for gluten free vegetarian eating! Check out the article for tips and tricks to cooking/baking gluten free.
