All of the recipes offered for my Polenta Challenge sounded great so thank you to everyone for participating! You can find all five recipes in the comments section of my previous post. The recipe I thought was the most interesting and creative was the recipe offered by:

Kaeli has played around with a gluten free diet after having reactions to wheat and barley. She was diagnosed with Celiac Disease recently and has been strictly gluten free since January 2011. She battles many other inconsistent food reactions to nuts, soy, corn, dairy etc. Kaeli is loving the Gluten free life because she feels more energetic and healthier in general. The kitchen is her laboratory and one of her current favorite dishes is Toasted Amarath.
Kaeli offered a creative recipe that seemed to me to be a unique use of polenta. Her and her sister had tried it once before and loved the outcome. She lovingly gave it the name:

SoyMuchinni or CornMush StirFry!
Recipe:
1. Chop up Polenta into bite-size cubes
2. Throw in a pan of Olive Oil and Salt (whatever amounts you desire)
3. Dice, cut or slice vegetables. (Kaeli uses Mushrooms, Zuchinni, Red and Yellow Peppers, Spinach, and Broccoli)
4. Add the veggies to the pan.
5. Add Sauce to taste (See had used Soyaki Sauce from Trader Joes in the past- however it is not gluten free) ****
6. Cook throughly and serve on it’s own or over rice.
****This sauce is not gluten free, however it contains simple ingredients. I was able to find a list of ingredients on this blog. Simply using a gluten free soy sauce such as San J Organic or La Choy and adding fresh ginger, minced garlic, onion powder, ginger powder and a small bit of Sesame oil may create a similar taste.
A combination of finals and mother’s day kept me out of the supermarket this week so unfortunately I won’t be able to try this recipe today, however I hope to try it once the semester ends. Thanks Everyone for your suggestions!
