Awhile back I received a sample pack of Tall Papa’s Gluten Free Breadcrumbs from the company who contacted me on Twitter. The company, established in 2010, makes 3 flavors of gluten free bread crumbs: Italian Flavored Multigrain, Cajun Spice, and Citrus Lime. Their products are made from all natural gluten gluten free ingredients and are packaged in eco-friendly packages. Most interestingly, the product is an inherited recipe, which was perfected over three generations.

Over the past few months I’ve tried each of the flavors in a few different ways. I used the Citrus Lime to make Breaded Fish both for a fish taco and for simply making ‘fish fingers’, I used the Cajun Spice to make fried pickle chips as well as breaded fish for another dish, and I used the Italian Flavored Multigrain to bread several casserole dishes as well as my Caprese Mac and Cheese.

I was a bit hesitant, as my experience with past gluten free breadcrumbs has been less than stellar, but I can say that I wasn’t disappointed with any of the flavors. They hold together well regardless of how you are cooking, and add not only crispy texture but flavor to your products. However, I found that when fried they do tend to get a bit soggier than I recall typical bread crumbs getting although they still maintain their integrity and flavor. My recommendation if using them to fry would be to use little oil, pat your item down after frying, and wait until the item cools to store.

Overall I would say that my favorite flavor is the Italian Flavored Multigrain breadcrumb. Although they were all great, this is of course the most versatile, and to me it had the best texture as it had added millet and other grains that the others do not. One thing to consider is that they do contain dairy, so this is something to avoid if you are dairy free. If you aren’t, I would surely give them a try!
