Ah Crumb Cake, the words themselves brings back memories of lazy and bright weekend mornings spent with my family as a kid. I had a rather regimented breakfast during the week, but the weekends were meant for indulging (within moderation of course) and for me that meant orange juice in a crystal glass and crumb cake or waffles. That’s right, I was a class kid. And I was a classy kid that LOVED crumb cake.
I haven’t had crumb cake since going gluten free so I was incredibly excited when Ardenne Farm approached me about their entirely gluten free line of products. Ardenne Farm products are all natural and free of artificial colors, flavors and preservatives. Further, their also vegan, and produced in a peanut and nut free facility.
One of their products is, you named it, Crumb Cake Mix which can be used to make cake or muffins. We opted to make the cake. Making the mix was effortless and although it does ask for butter, milk, or eggs the box specifically notes that substitutes can be easily used in their place. The finished product was just what I had remembered of my childhood crumb cakes: A pillowy mouthful of crumbly goodness with moist pockets of cinnamon. The sweetness of the crumb topping was offset well by the cinnamon throughout, and I absolutely loved the richness of this mix. Just be sure to limit the size of your piece, if you can, to minimize calories.
