These cookies combine two childhood favorites, PB&J Sandwiches and Cookies. Strawberries are used as a healthy substitute for Jelly, and sweeten up the typical peanut butter cookie flavor.
Gluten Free Peanut Butter & 'Jelly' Cookies

Serves: ~18 Cookies
Ingredients
- 1 large egg
- ¾ cups sugar
- 1 tsp baking soda
- 1 tsp vanilla
- 1 cup Gluten Free Creamy Peanut Butter (Natures Promise is what I used)
- ½ cup chopped strawberries
- 1 or 2 strawberries sliced to place on the top
- Coarse sugar to sprinkle on top
Instructions
- Preheat oven to 350 degrees.
- Mix all ingredients, except the sliced strawberries for use on top of the cookies, until well mixed.
- Drop dough by the spoonful onto a greased backing sheet, or one lined with parchment paper.
- Press each cookie lightly with a fork in two directions to create a crosshatch pattern, then place a strawberry slice on top of each cookie.
- Cook for approximately 12-15 Minutes, until golden brown.
- Remove cookies from baking sheet, let cool, and sprinkle with coarse sugar.
