Gluten Free Peanut Butter & ‘Jelly’ Cookies

These cookies combine two childhood favorites, PB&J Sandwiches and Cookies. Strawberries are used as a healthy substitute for Jelly, and sweeten up the typical peanut butter cookie flavor.

Gluten Free Peanut Butter & 'Jelly' Cookies

Ingredients
  • 1 large egg
  • ¾ cups sugar
  • 1 tsp baking soda
  • 1 tsp vanilla
  • 1 cup Gluten Free Creamy Peanut Butter (Natures Promise is what I used)
  • ½ cup chopped strawberries
  • 1 or 2 strawberries sliced to place on the top
  • Coarse sugar to sprinkle on top
Instructions
  1. Preheat oven to 350 degrees.
  2. Mix all ingredients, except the sliced strawberries for use on top of the cookies, until well mixed.
  3. Drop dough by the spoonful onto a greased backing sheet, or one lined with parchment paper.
  4. Press each cookie lightly with a fork in two directions to create a crosshatch pattern, then place a strawberry slice on top of each cookie.
  5. Cook for approximately 12-15 Minutes, until golden brown.
  6. Remove cookies from baking sheet, let cool, and sprinkle with coarse sugar.
