  1. I liked you on FB. Thank you so much for writing about the social aspect of Celiac. My daughter (5 years old) was just diagnosed. I have been able to find more than enough info on the physical aspects of Celiac, but next to nothing on how to prepare her for the social misunderstandings and pressures. Thank You!

    1. Thank you! I find that the social and psychological aspects often end up being as much, if not more, of an issue than the physical. Although not directly influencing ‘health’ they are INCREDIBLY important so I am happy to shed light on them and am glad you find it valuable.

Can you please leave an email address in case you are the winner? Thanks!

  3. I love making vegetable and beans tortillas. I put some retried beans, scallions, Chinese pea pods, some diced tomatoes and bean sprouts on the tortillas. I then sprinkle a little chili sauce on top. I warm then up in a damp paper towel in the microwave for about 30 seconds and then they are done. They taste so good!
